做法:春笋切成片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
