做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水(shuǐ )半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮(zhǔ )到水快(kuài )熬干的(de )时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
