做法:春笋切(qiē )成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
